   Penne Pasta and Broccoli

Ingredients:

2 cups - penne pasta
4 cups - broccoli, chopped
1 cup  - chicken broth
2 teaspoons - olive oil
1/2 onion - minced
2 cloves - garlic

grated Parmesan cheese

A light pasta recipe that is flavorful and low in calories. If you'd like, cook cubed chicken separately in a nonstick skillet and add to the finished dish.

  1. Bring two pots of water to boil. In one, add the pasta and cook according to the package (usually 10-12 minutes). Place a steamer basket on the second pot. The basket should be one inch from the water. Steam the broccoli in the covered steamer for 5 minutes or until soft.

  2. After the broccoli is finished, pour the oil and chicken broth in a skillet and let it simmer for a minute. Add the onion, garlic and broccoli. Stir constantly for 5 minutes.

  3. Place the pasta in a serving dish and pour mixture over pasta. Grated Parmesan cheese can be added for additional flavor.

Yields: 4 servings.
